A nice little lunch I’ve been making. Soooo simple to make! And a perfect keto lunch! Macros are:

  • Calories – 532kcal
  • Fat – 37g
  • Protein – 49g
  • Carbs – 0g
  • Sugar – 0g

Swap out the chicken breast for chicken thighs to get a bit more fat, but I find it a lot easier using breasts.

So, what you need:

  • Chicken breasts (duh)
  • Mexicana cheese (or any other cheese of your choice. I find this cheese adds a bit more kick to the chicken)
  • Pepperoni
  • Fajita seasoning
  • Salt and pepper

So first thing’s first, get your breasts and slice them length ways and stuff them with cheese, like so:

Next, close them up and just fuck them up with seasoning. Then slap some pepperoni on top. Like so:

Then wack that shit in the oven. Pre heat it before prep so it’s nice and toasty when you put your food in. I stick it at 180C. Leave it in there for 20-25 minutes.

I also like to have a bit of veg so I found these yummy cauliflower and broccoli gratins at Iceland for under £2. Macros are:

  • Calories – 203kcal
  • Fat – 17.4g
  • Protein – 3.2g
  • Carbs – 7.3g
  • Sugar – 2.4g

Stick them in too!

One benefit of cooking your own food is the cost! All in all, here is what I paid:

  • Chicken breasts x 5 – £5.75
  • Mexicana Cheese – £2.00
  • Pepperoni slices – £1.25
  • Cauliflower and broccoli gratins – £1.79

In total, that’s £10.79. Which works out to be just over £2.50 for 4 days lunches. Plus I had a chicken breast for dinner tonight!
